patty cake

Made my first cake from scratch today! Woo-Hoo! I usually don’t bake… its way too precise… I am more of an experimental cook… but this turned out wonderful…mmmmm

 CAKE

2 cups boiling water

1 c unsweetened cocoa powder

2 c all-purpose flour

2 teaspoons baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 c butter, softened

½ c vegetable oil

2 1/4 cups white sugar

4 eggs

1 1/2 teaspoons vanilla extract

dash of instant coffee

dash of cinnamon

Preheat oven to 350 degrees F.  Grease 2- 9 inch round cake pans. (i only have one… so i did this twice)

  1. boil water add cocoa powder, instant coffee, and cinnamon… whisk until smooth… remove from heat and let cool
  2. Sift together dry ingredients in separate bowl: flour, baking soda, baking powder and salt; set aside.
  3. In yet another (large) bowl, cream butter, oil, and sugar together until light and fluffy. Beat in eggs one at time, then stir in vanilla.
  4. Add dry ingredients and cocoa mix alternately to the softened mix… whisk, mix, beat until smooth
  5. Pour ½ the batter into pan. Bake in preheated oven for 25 to 30 minutes. Allow to cool. flip onto a plate. (repeat)

TOPPING

This was ad-libbed… so not sure the exact amount… wanted to make frosting…but only used what I had in the pantry

½ c butter

2 c light brown sugar

½ dark brown sugar

1 teaspoon vanilla

1/2 c bailey’s

a few handfuls of crushed walnuts

boil everything but the nuts… kind of like a caramel sauce… watch it bubble….don’t let it burn… lower heat and walnuts

i sprinkled a bit of salt on each cake before i put the topping on

drizzle the mixture on cake one… stake cake two…pour the rest on top….. mmmmm

eat it while its warm…
